Pumpkin Cake Recipe

As promised, here is the recipe. It is very good and I am told it is easy. Enjoy!

PUMPKIN PIE CAKE----------------
1 - 29 oz. can pumpkin puree
1 - 12 fluid oz. can evaporated milk
3 eggs
1 cup white sugar
1/2 tsp. salt
4 teaspoons pumpkin pie spice
1 - ( 18.25 oz.) package yellow cake mix
3/4 cup butter
1 cup chopped walnuts

Preheat oven to 350°F (175 degrees C). Lightly grease one 9x13 inch pan (preferably metal). In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, salt, and pumpkin pie spice. Mix well. Pour batter into the prepared pan. Sprinkle the dry cake mix evenly over the pumpkin mixture.Melt the butter or mararine, and drizzle it over the cakemix. Sprinkle walnuts over the top. Bake for 55 to 60 minutes, or until done.

Singspiration!

I have two lady friends that I sing with at church and we are having a singspiration this Sunday night. My friend Teresa brought us a pumpkin cake and it was scrumptious. I will post the recipe as soon as she sends it to me. We also are singing at an outside church on Tuesday night for revival. It is so much fun going around and singing for other folks. Last year we did one revival and that led to another and another and another and all together we sang at 6 different churches. We sing southern gospel mostly. What a blessing it is to be able to praise the Lord in song! We have a great time doing it too. My friend Katherine and her sister, Teresa, sing with me. Katherine is at www.thecountrywoodshed.com . Please go and visit her. She is new on SLS and needs for us to encourage her. She is on the Market Square.

Thats all for today because I know you don't want to hear about my ailing gallbladder. I am afraid I am facing surgery soon ! Please say a prayer for me as I have been kind of puny here lately.

In Memory of Shirley

With October being breast cancer awareness month, I want to remember my friend Shirley Daugherty, who lost her battle with breast cancer this past year. She was a beautiful person, inside and out. She was a teacher, a pastor's wife, a wonderful mother and grandmother, a friend and a wonderful artist. She was also a devout Christian and praised the Lord until the day she died! She was 2 years away from retirement. She used to say, "when I retire, I can paint full time" it was her passion. I admired her so much. She always had a smile and a friendly word, she took the time to be your friend. She was a gracious hostess. I remember going to visit her and she made cookies or something for our visit even though she was so sick. She was so caring and loving. I remember the impact at her funeral because her family had placed 3 or 4 of her paintings by the casket and the art spoke so loudly to me that I cried! She will live on in that beautiful art. The lesson from all of this is what spurred me on to open my website and carry on my art, even though I am still working full time. Since the stock market fell, I probably will work until I am 100 anyway but I decided not to wait but to pursue my art in every spare moment that I have. If nothing else, my children will keep my artwork and it will live on for them!

Last but by no means least, on October 18, 2003, I lost my precious baby sister to cancer of the pancreas. She was 43 years old. I will forever miss her, though she is with me in spirit all the time. She loved to watch me paint and she would say "you can do it sissy". I can still hear her saying that to me. I will cherish our special memories always!
